Moussaka – “Lightened Up” Version Greek Casserole

This version is Rachel Ray’s “lightened up” version of the very rich traditional moussaka recipe.  Made with baked eggplant and zucchini then layered with lean ground turkey in a garlic-y tomato sauce then all topped with gruyere and pureed cottage cheese.  Traditionally over 600 calories per slice, this version is under 300 per slice plus includes the awesome addition of roasted vegetables.
