Crock Pot Meal of the Week: Chicken Chili and Barley Casserole

As with all my crock pot dishes, you choose if you want this cooked and ready to eat or prepped and ready to cook in your crock pot! This recipe is part chili and part casserole and your family is sure to enjoy. Or make it and freeze it in portions for later. Made with a bit of chorizo for flavor and includes chicken breasts, lots of veggies and spices, white beans, and tomatoes. Serve with avocado slices with squeezed lime on top.

Boneless, skinless chicken is slow cooked in a slurry of sugar-free root beer, ketchup, vinegar, molasses, Worcestershire sauce, liquid smoke, onion powder, garlic powder and paprika. The faux-tatoes are made with cauliflower, parsnips, milk and butter. Low fat, low carb, gluten free and soy free.

On March 21st, I asked my Facebook friends what they are trying to give up, understanding that some are practicing this self-denial for Lent, and others giving up anything leavened for Passover, a holiday traditionally celebrated by Jews commemorating the exodus out of Egypt and transformation of the people from slavery to freedom.

Of the 21 or so responses, many listed sugar, high fructose corn syrup, chicken, wheat, corn, diet Coke, white carbohydrates, gluten, cheese, and more.
